What is Donkkaseu?

“Donkkaseu”, is a breaded and fried pork cutlet. Although the word “donkkasseu” originated from the Japanese “tonkatsu”, this dish actually comes from Europe, mimicking a Schnitzel!
You can commonly find Korean Donkkaseu served with traditional Japanese-style barbecue sauce (Bulldog brand, see end of post for link), or with a Japanese curry.

Honest Review/Thoughts

My main use for these is with Japanese curry! Our preferred method is to air fry, since it comes out with a great crust (and less oil is always a plus!) Texture is great, and it is not dry at all. I actually think that this yields an even better crust if it were properly deep fried.
I’ve seen other reviews where others thought the cutlets were a bit salty, so give it a taste before you make your sauce accompaniment. I’ve purchased this a few times already and am never disappointed. Since it’s frozen, I’m happy to always have a pack in my freezer to limit my ordering at Volcano Curry House!

COOKING INSTRUCTIONS

Here’s how to cook Surasang Formed Chicken Breast Katsu Fritters:

Deep Frying Method:

  1. Set deep fryer to 340 deg. Fahrenheit and when oil is ready, put frozen Katsu in fryer.
  2. Cook for 7 to 8 minutes until internal temperature reaches minimum 165 deg F. as measured by a food thermometer.
  3. Remove from oil and let rest for 3 minutes.

Air Fryer Method:

  1. Evenly and liberally brush vegetable oil on all surfaces of frozen Katsu.
  2. Set Air Fryer to 12 minutes at 400 deg. F. and place the oiled Katsu in Air Fryer.
  3. After 12 minutes, flip over and air-fry an additional 5 minutes at 400 deg F until internal temperature reaches minimum 165 deg F as measured by a food thermometer.
  4. Remove from Air Fryer and let rest for 3 minutes.

Pan Fry Method:

  1. Pour vegetable oil into a pan to about 1 inch in depth and heat on medium-high until oil temperature reaches about 340 deg. F.
  2. Reduce to medium-low heat and carefully add frozen Katsu to heated oil.
  3. Cook for 12 to 14 minutes, flipping frequently, until golden brown and internal temperature reaches minimum 156F as measured by a food thermometer.
  4. Remove from oil and let rest for 3 minutes.
