What is Yellow Croaker?

Itโ€™s possible that youโ€™ve seen both terms โ€œYellow Croakerโ€ and โ€œYellow Corvinaโ€. Until today, I thought these terms were used interchangeably, however that is not the case. They both belong to the Croaker family, with Yellow Croakers being the smaller fish and Yellow Corvina being the larger. Yellow Croakers mainly reside in the coastal regions of Asia, and are known for their tender, flaky flesh. Itโ€™s versatile, delicate and slightly sweet, making it perfect for various cooking methods such as grilling, braising and my personal favorite, frying.

Jayone Frozen Boneless Yellow Croaker Cooking Instructions (Fried Yellow Croaker)

I used this recipe from Naomi Imatome-Yun on The Spruce Eats to make Fried Yellow Croaker.

  1. Thaw whole bag of Jayone Frozen Boneless Yellow Croaker
  2. Once thawed, marinate the fillets with the following ingredients for 15 minutes:
    – 3 tbl soju or rice wine
    – 2 tbl crushed garlic
    – ยฝ tsp salt
    – ยผ tsp black pepper
  3. In a separate bowl, mix the following ingredients:
    – ยผ cup all-purpose flour
    – ยฝ tbl glutinous rice powder
    – 1 tbl cornstarch
  4. Dip the fillets into the flour mixture, making sure to coat both sides evenly
  5. In a medium pan, add enough canola oil to coat the surface of the pan and heatย 
  6. Pan fry the fillets over medium-high heat until nicely browned, about 3 minutes on each side
  7. Remove from the pan and place on a plate lined with paper towel to drain the excess oil

Honest Review/Thoughts

When I first had the fried fish banchan at BCD Tofu House, my world was transformed. Iโ€™ve had other fried fish dishes before, but picking a small, whole fried fish with my chopsticks is such a satisfying dining experience.

Although this isnโ€™t the whole fish, this dish was still just as good. Also, since itโ€™s boneless, I was able to really taste the delicate, slightly sweet flesh. I was also able to get a really nice crispiness to the fish! I mean, look at that – almost restaurant quality! Jayoneโ€™s Frozen Boneless Yellow Croaker is a great bag to have in your freezer due to its versatility. I canโ€™t wait to try it in soups or using it in a Chinese style steamed fish dish. Highly, highly recommend giving this a try!
